My sweet potato pie recipe:
Sweet Potato Pie
Prep: 30 minutes
Bake: 35 minutes
Cool: 30 minutes
Oven: 375F
Makes: 8 slices
1 recipe for Bakery Pastry Shell
2 cups mashed cooked sweet potatoes or one 17.2 ounce can sweet potatoes, drained and mashed
½ cup sugar
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground nutmeg
⅛ teaspoon salt
3 eggs, lightly beaten
1 cup buttermilk or dairy sour cream
Prepare baked pastry shell, set aside. Preheat oven to 375F. For filling, in a large bowl stir together sweet potatoes, sugar, cinnamon, allspice, nutmeg, and salt. Add eggs; beat lightly with a fork or until just combined. Gradually stir in buttermilk until thoroughly combined.
Place baked pastry shell on the oven rack. Carefully pour filling into pastry shell. Bake for 35 to 40 minutes or until knife inserted near the center comes out clean. Cool on a wire rack for at least 30 minutes. Cover and chill within 2 hours.
