Spinach Brownies

Fall and winter time makes me crave cooking casserole dishes. Below is one of my favorite casserole recipes, spinach brownies. Found this off of allrecipes.


Spinach Casserole:

Prep: 20 minutes

Bake: 35 minutes

Oven: 375F

Makes: 8 servings


1 (10 ounces) package spinach, rinse and chopped

1 cup all purpose flour

1 teaspoon salt

1 teaspoon baking powder

2 eggs

1 cup milk

½ cup butter, melted

1 onion chopped

1 (8 ounce) package shredded mozzarella cheese


  1. Preheat the oven to 375F degrees, lightly grease a 9x13 inch baking dish.

  2. Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes. Remove from heat, drain, set aside.

  3. Mince the onion, put into a small bowl and set aside.

  4. In a large bowl, whisk together the flour, salt, and baking powder. Stir in milk, eggs, butter. Mix in spinach, onion, and mozzarella cheese.

  5. Transfer the mixture into the baking dish. Bake in a preheated oven for 35 minutes to 40 minutes, until it is golden brown and a toothpick inserted in the center comes out clean. Cool before serving.
