Holiday Sugar Cookies

Oven: 400F
3 ¾ cups of all purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups of white sugar
1 cup margarine or butter, softened
2 eggs
2 teaspoons of vanilla extract
Sift flour, baking powder and salt into a medium bowl; set aside.
Beat sugar and margarine or butter in a large bowl with an electric mixer until smooth. Beat the first egg into the butter mixture. Beat the second egg into mixture along with the vanilla extract; add flour mixture and stir until dough is just combined. Wrap dough; chill in the refrigerator for 2 hours.
Preheat the oven to 400 degrees F, (200 degrees Celsius). Grease two cookie sheets.
Roll out dough on a cleaned floured surface to ¼ thickness. Cut out shapes using cookie cutters; arrange them on the prepared cookie sheets. Gather scraps and repeat the steps.
Bake in batches in the preheated oven until the edges are golden brown, about 6 to 8 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.
